Here is our first carrot crop of the year...They are small but because of the snow we got, I was afraid that they would get wasted. So I picked a row! The smaller the sweeter they are. These are VERY yummy! This was just the small row, we still have another 4 rows to pull up!

Too some they may sound yucky (Mary!!!) BUT these are really good!!!and it is not just because I am prego! :) They are sometimes served at Mexican restaurants. They are spicy and sweet.... crunchy..... and easy to make! Good healthy snack to keep in the fridge!

Serves:
4 servings
Ingredients
1/2 pound mini carrots
1 cup water
1 cup sugar
1 1/2 cups cider vinegar
1 teaspoon onion powder
1/2 teaspoon mustard seeds
1 1/2 teaspoons kosher salt
1 teaspoon chili flakes
2 dried chilies
Directions:
Place carrots in a spring-top glass jar. Bring the water, sugar, cider vinegar, onion powder, mustard seeds, salt, and chili flakes to a boil in a non-reactive saucepan. Boil for 4 minutes. Slowly pour the hot pickling liquid over the carrots, filling the jar to the top. Place the chilies in the jar. Allow the carrots to cool before sealing. Refrigerate for 2 days up to 1 week. Or place in jars and water bathe for 30 mins.

We love pickled carrots, there was this restaurant in milwaukie, called La Conga, they served pickled carrots and jalapenos together delicious...and I am not prego! ;) So is tomorrow the big day???? Please text me with the news! I really need to come visit!
NO my appointment got moved....it is now the 28th of October.....I will keep everyone updated....
